Our process places environmental stewardship at the forefront,
resulting in a gentle, balanced approach with a minimal footprint.

Olives, hand-picked from the tree, are carried daily to the mill where they are pressed within 8 hours. A high-quality oil is then obtained through extraction by centrifugation at room temperature (maximum 23 degrees Celsius).

The oil is stored in stainless steel tanks at a constantly controlled temperature in the absence of light and oxygen.

Bottling and storage are conducted in a strictly controlled and inert environment protected by nitrogen, preventing the olive oil from degrading.
Chemical analyses of the product are carried out frequently to ensure that our high expectations are consistently met. 

A very unique territory

Ultra-Premium CIVITA Extra Virgin Olive Oil is made in Canino, the home of the Caninese Olives. Possibly the oldest olive native Italian variety, already documented in the Etruscan frescoes.

A very unique territory situated halfway between the sea and the cone volcano of Bolsena. Here we have different terrains (sand, clay, rock, tuff, volcanic lapilli) and different microclimates.
